tonight's light supper

"crushed potatoes, spinach, chicken surprise, bacon topped with a poached egg..."

I'm certainly one who doesn't like to waste food. If there are ingredients in the fridge that need using up, then I'll find a way. Following on from the spinach and cheese tostada yesterday, the spinach at least needed finishing. The chicken surprise really was such to me as the rolled chicken piece (I've never bought one before) contained both walnuts and prunes...a great and healthy combination. No real recipe intended for this unless demand warrants it, but it made for a tasty supper. The poached egg was a bit on the flat side but hey, perfectly cooked...I'll share the secret of making great poached eggs another day.
